Caramel Strawberry Butter Pancakes

Looking for the perfect breakfast sensation? Beautiful golden pancakes draped in strawberries and caramel sauce. Great for a special treat on a lazy Sunday or to keep even the fussiest of kids wanting more.

  • 2 cups self-raising flour
  • 2 tubs wicked caramel dip
  • 2 eggs
  • 2 tablespoons of caster sugar
  • 2 cups of milk
  • ¼ teaspoon vanilla extract
  • 50 grams of butter
  • Strawberries
  • Ice cream

Step one: Sift flour into a bowl , stir through the sugar.

Step Two: Make a well and add the eggs and milk slowly whisking mix together.

Step Three: Add vanilla extract to mixture and stir.

Step Five: Heat a large, non-stick frying pan over medium heat. Add a teaspoon of butter and allow to melt.

Step Six: Using 4 tablespoons of batter per hotcake, cook for 2 or 3 minutes or until bubbles appear on the surface. Turnover and cook for a further 2 minutes or until golden. Remove to a plate and repeat process.

Step Seven: Cut strawberries into slices and place on pancakes.  Add ice cream.

Step Eight: Remove foil lid off caramel dip and place in microwave for 10 seconds.

Step Nine: Drizzle desired amount of caramel over pancakes to serve.
